Our nutrition and dietetic faculty conduct research in the following areas:

Medical Nutrition Therapy

Research includes the relationships between cinnamon and blood glucose control, the impact of various spices on nausea during cancer treatment, the role of vitamin D as it relates to falls and fractures in the elderly, and attitudes toward complementary and alternative medicine.

Community Nutrition

Research focuses on the effectiveness of various nutrition assessment methodologies and the development, implementation, and evaluation of nutrition education programs for various populations, (e.g., preschool children, Special Olympics, low-income mothers, worksite wellness).

Sports Nutrition

Research focuses on knowledge, attitudes, and behaviors related to hydration and supplement use; nutrition practices of cross-fit trainers; the role of nutrition-related anticipatory guidance among college athletes; and current nutrition knowledge and practices of collegiate athletes.
